Directions

1 For the Cookies: Preheat oven to 350° F

2 Using a hand mixer with a large bowl or stand mixer, cream together butter, brown sugar, granulated sugar and vanilla

3 Add eggs, 1 at a time, beating well after each addition

4 Gradually add flour, salt and baking soda. Mix to combine

5 Fold in chocolate chips until evenly distributed throughout the batter

6 Scoop 2 1/2 tablespoons of batter and form into a ball. Place on a parchment lined baking sheet

7 Bake for 12-14 minutes or until golden brown. Allow cookies to cool

8 Place a large scoop, about 1/3 cup of Stoneridge Creamery Cookies and Cream Ice Cream onto one of the cookies and top with a second cookie

9 Sandwiches can be wrapped in parchment paper and stored in the freezer for up to 3 months.

1 carton Stoneridge Creamery Cookies and Cream Ice Cream

2 1/4 cups all-purpose flour

1 tsp baking soda

1 cup butter, softened

2 eggs

3/4 cup granulated sugar

3/4 cup light brown sugar, packed

1 tsp salt

2 cups semi-sweet chocolate chips

1 tsp vanilla extract
