#1 In a medium size microwavable bowl, place the sliced onions, oil and vinegar. Stir and microwave for about 4 minutes. If you'd like more tender onions, give it 30 seconds to 1 more minute. # 2 Prep salami. # 3 In a skillet, add a tsp oil over medium heat. Fry the salami strips and set aside. # 4 In the same skillet, add the rest of the oil and increase heat to high. When the oil is hot, use a lid begin to fry the eggs until they are cooked to your liking. I like a runny yolks so in a minute or so, my eggs are done. # 5 I also use a spoon to splash the eggs over the top with some of the oil. Cooks the top faster. # 6 Once eggs are done, set eggs aside and assemble the platter quickly. # 7 Natuchips at the bottom, topped with salami, crumbled cheese, onion relish and it's oil, the fried eggs and chopped cilantro.
