#1 Line a 9-inch springform pan with parchment paper. #2 Carefully place 14 cookies around the wall of the pan and 14 cookies on the bottom of the pan. #3 Melt Breyers Natural Vanilla in a pot over a low flame until melted. Mix in ½ teaspoon lime zest. #4 Pour in 1 cup Breyers Natural Vanilla over the cookies on the bottom of the pan. #5 Place the pan in the freezer for 30 minutes to firm for a moment. #6 Layer 12 more cookies in then pour 1 cup of Breyers Natural Vanilla over cookies. #7 Continue alternating between a layer of 12 cookies and 1 cup of Breyers Natural Vanilla until done. Ending with Breyers as the top layer. #8 Place pan back in the freezer overnight. #9 Remove from freezer and top with lime slices, and ½ teaspoon lime zest. #10 Slowly detach springform pan from Carlota. #11 Cut and serve immediately.
