#1 Preheat the oven to 350°F. Spray an 8”×8” baking dish with cooking spray and set aside. #2 In a medium bowl, combine the graham cracker crumbs, melted butter, lemon zest, and salt. Press the mixture firmly into the bottom of the prepared pan. Bake for 7-10 minutes, remove from oven and set aside to cool to room temperature. #3 To make the filling, combine the egg yolks and condensed milk in a medium bowl. Stir in the salt, lemon juice and zest. Stir until mixture is smooth. Fold in the blueberries. #4 Pour the filling evenly over the cooled crust. Bake for approximately 15 minutes, or until set. #5 Allow the pan to come to room temperature. Chill in the refrigerator until cold before cutting into even bars, at least 2 hours. Dust lightly with confectioners’ sugar prior to serving.
