#1. Prepare béchamel sauce: melt the butter in a medium sauce pan and add flour, stirring for 2 minutes. Slowly add milk and cream while whisking. Simmer for 3-5 minutes or until sauce coats the back of a spoon.#2. Turn heat off and add salt, pepper, nutmeg, and 1 cup of the Mifroma® Gruyere, set aside.#3 To prepare sandwich, preheat oven to broil.#4. Heat an oven-proof skillet over medium heat. Brush each slice of bread with Dijon, top with ham and remaining 1 cup of Mifroma® Gruyere. Spread butter on top and bottom of each sandwich.#5 Cook on each side until golden brown. Spoon béchamel on top of each sandwich, sprinkle a little more Mifroma® Gruyere on top. Transfer to the oven – Broil for 1-2 minutes or until golden brown.#6. Meanwhile fry the eggs in a skillet with butter until whites are set. Gently slide an egg on top of each sandwich. Serve immediately.
